This is a natural-dried coffee, meaning the bean is left in the cherry to dry and the chaff is removed once dried. This imparts different profiles than washed coffees with deeper flavors and base. It takes professionals with experience to utilize the natural-drying process, and the Girma family shows they have the know-how.
This is another excellent cup with a great body, smooth mouthfeel and superior sweetness. Expect hints of pineapple and mandarin orange with traces of caramel, a tiny bit of cocoa, and a small amount of subtle acidity at the finish. Simply fantastic!
